Roasted Cauliflower with Spicy Red Chimichurri

Preparation:
Set oven to 400°
Slice 2 small cauliflower floretes in half making sure you keep core intact (I like to keep some leaves for an extra crispy char)
Lay cauliflower flat side down on a parchment lined sheet tray
And brush with spicy red Chimichurri oil top and bottom
Bake for 25 minutes until slightly charred
Drizzle desired amount of spicy red Chimichurri to serve.
