Chimichurri Chickpea Salad

What you need:
  • 3 c Chickpeas rinsed and drained
  • 1 c Arugula chopped
  • 1 medium Fennel Bulb shaved (+ some chopped fronds)
  • 1/2 Red Pepper (chopped into bite size pieces)
  • 1/2 cup crumbled Feta (optional)
  • 1 T Lemon Juice
  • 3 T Mom’s Green Chimichurri
Salt and Pepper to taste
What you do:
Toss all ingredients with Mom’s Green Chimichurri and salt and pepper to taste.
Transfer to platter and top with squeeze of fresh lemon juice
